Mini Pancakes with sprouted Moongdal
The recipe I have shared here is good source of protein because I used sprouted Moongdal or green gram. If you want to use normal moongdal you can use them but sprouting will increase the nutritional content present in it. A person needs 0.8 gm of protein per kg of body weight. Moms should watch whether the child is getting enough protein from their diet or not. Now let's go through the recipe.
Ingredients:
- Moongdal or Green Gram sprouted - 2 cups
- Semi brown rice soaked in water for minimum of 4 hours- 1/4 cup
- Ginger - 1/2 inch
- Green chilli - 1 or 2
- Cumin or Jeera seeds - 1 teaspoon
- Oil or ghee - 1 teaspoon
- Onion finely chopped (optional)
- Salt - 1 teaspoon or add according to your taste
Directions:
- Add sprouted Moong dal, semi brown rice (you can use normal rice also), ginger, green chilli, salt and cumin seeds into a blender or a mixer grinder and blend into a smooth paste. Add enough water while blending to adjust the consistency of the batter. If you want to add onion you can add at this step.
- Heat the tawa or a pan and keep it in medium flame. While the tawa is hot enough pour the batter using a round ladle into small round mini pancakes according to the size of the pan/tawa.
- Now add a drop of ghee or oil along the edges of all the pancakes
- Flip the pancakes to the ride and make sure it is well cooked on both the sides.
- Now our Mini moong pancakes are ready to serve. You can serve along with any chutney, my kid loves to eat along with homemade peanut butter.
