Puffed Rice Vegetable Upma

 Puffed rice/Murmura  is nutritious for kids and they love the taste too. It is also easily digestible. We can make many tasty and quick recipes using puffed rice. 

The recipe I made here is very easy to make and we can make in less amount of time. I made a remake version of Uggani, served with Green chili fitters (Mirchi bajji)which is most popular breakfast recipe in Rayalaseema region, Andhra Pradesh(India). I added some vegetables and peanut powder to the recipe to make it more healthy. If you skip adding vegetables(I used carrot & beans), you can make original version of Uggani.

Now let us go through the recipe


INGREDIENTS:

Puffed rice - 4 cups

Beans - few chopped 

Carrot - 1 medium size (chopped)

Tomato - 1 medium size(chopped)

Onion - 1 medium size (chopped)

Green chillies - 2 chopped (or as per required spiciness)

Curry leaves - 6-8 (1 sprig)

Peanuts - 1/2 cup

Roasted bengal gram - 1/2 cup

Dry red chili powder - 1/2 teaspoon

Cumin seeds - 1 teaspoon

Mustard seeds - 1/2 teaspoon

Urad dal - 1 teaspoon

Split bengal gram - 1 teaspoon

Turmeric powder - 1/2 teaspoon

Cashew nuts - few (optional)

Oil - 2 teaspoon(I used sesame oil)

Salt - 1 teaspoon (or as per taste)

Lemon juice - 1 full size (1 tablespoon)


PROCESS:

Preparation : 

First wash puffed rice once and then drain the water using a strainer. This step makes puffed rice soft.

Wash and chop all the vegetables into small pieces and keep it ready.

Dry roast peanuts and keep it ready.

Now add peanuts, Fried Bengal gram, Red chilli powder(optional) and 1/2 teaspoon cumin seeds in mixer grinder and make into coarse powder




Now heat oil in a pan and add mustard seeds, once they splutter add cumin seeds, urad dal, split bengal gram, cashew nuts(optional) and saute for a minute.



Next add green chilies, Curry leaves, beans and carrot saute for a minute and cover with the lid.


Make sure that beans and carrot are well cooked. Now add onion and tomato and saute for 2 minutes.

Add enough salt and close the lid for 2 minutes. Onion will just become translucent. Immediately add the puffed rice (washed & strained), add turmeric powder and saute for a minute along with the vegetables.
Now the prepared powder to the dish and mix it thoroughly for a minute in medium flame.

After combining the mixture well, switch off the flame and sprinkle some coriander leaves.
 Add lemon juice and mix it well again and to extra crunch to the dish I added some more roasted peanuts on the top. Now our dish, Puffed rice vegetable Upma is ready to be served.
