Millet Idli with Sprouted Pearl millets/ Sajjalu Idli with Coconut Chutney recipe
Pearl Millet is highly nutritious and is highly recommended for people with different age groups. It can be also given for infants as weaning food and is also good for lactating mothers as well.
It contains good amount of iron and zinc and soaking, fermentation helps to increase its absorption capacity of the body. I used Sprouted Pearl millets to prepare idlis because sprouting will double the health benefits. So try to use Sprouted grains in cooking recipes whenever you can. This recipe also contains urad dal which is power packed with protein and different minerals. It is ideal for breakfast for toddlers and for younger kids and gives good amount of energy.
Now let us go through the recipe details,
Ingredients:
Urad dal - 1 cup
Pearl Millet - 1 cup
Salt - as per your taste
Water - as required
Process:
1. For sprouting pearl millet:
Wash the pearl millet twice with plain water and soak them in enough water for a minimum of 12 hours or overnight. Then transfer the millets into a clean cotton cloth and tie it closely. After two to three days depending on the climate you stay, you can see an inch size sprouts.
2. After the sprouts get ready or on the day before you want to prepare idlis, soak urad dal in a large bowl for minimum of 6 to 8 hours. Then grind the urad dal into a smooth paste by adding enough water.3. Grind the little pearl millet little coarsely as shown in the picture below. This step is important to get soft idlis.
2. In the same add green chillies first and fry them in 1 spoon of oil. I used cold pressed sesame oil in this recipe. Later add garlic and after switching off the flame add cumin/jeera seeds.
3. Now grind sesame seeds and groundnuts into fine powder and transfer to a container. Later add coconut pieces and green chillies mixture and make into a fine paste by adding enough and salt.
