Mushroom Soup Recipe
Mushrooms contains lot of minerals and the antioxidants present in them helps us reduce the risk of neurological illness in future. Mushroom also contain traces of Vitamin D.
All mummas include Mushroom into your kid's diet at least once or twice in a week. Kids love to have this soup in winters and rainy season. Now let's go through the recipe.
Ingredients:
Mushrooms - 200 gm
Ginger - 1/2 inch
Garlic - 4 cloves
Cornflour - 2 spoons
Coriander & mint leaves few (optional)
Black pepper powder - a pinch
Butter or oil - 1 teaspoon
Salt - 1 teaspoon or per your taste
Water - 250 ml
Directions:
Heat the sauce pan and add butter and saute mushrooms chopped, for 2 minutes in a slow flame. You will see lot of water coming out of them, use this water too in the soup.
Keep few mushroom aside. Take the remaining mushrooms, cool them a little bit and blend them into a smooth paste.
To prepare cornflour slurry, add the cornflour in to 1/2 cup of normal water and mix with a spoon until lumps get disappeared.
Again heat the pan and add 1/2 teaspoon of butter and add chopped garlic and ginger, saute them until they reach light brown in color and add the mushroom puree a saute for a while. Add the leftover mushrooms chopped to the soup if you like to have crunch in your soup.
Now add water and salt. When soup starts to get boil, add cornflour mixture to soup and mix it with a ladle.
Now add black pepper powder, mint and coriander leaves to the soup and boil for a minute. Now switch off the flame and your yummy 😋 Mushroom soup is ready to be served.
