Coconut Burfi with Jaggery

 Coconuts has tremendous amount of health benefits. Including them in your kids diet gives a good advantage for their health. Instead of offering unhealthy sweet treats or regular chocolates, try this sweet recipe which is healthy for them. The recipe I have shared here is very easy to make and has very few ingredients but the taste will be excellent and your kids love to have them as a treat.

In this recipe I used jaggery, you can also substitute it with regular sugar. But I recommend you to use jaggery, since it doesn't harm our children when taken in moderate amounts. I also added some nuts to the recipe to add some crunch to the barfi and this step is optional, you can skip this step. Adding elaichi powder gives nice flavour and taste to the recipe. 

Now let's go through the recipe details..




INGREDIENTS:

Grated coconut - 1 cup

Jaggery - 3/4 cup

Elachi powder - 1 teaspoon

Nuts - 1/4 cup (I added almonds and cashew nuts)

Water - 1/4 cup

PROCESS:

1. Take coconut pieces and add it to mixer grinder/ blender jar and just pulse for a few times until the no large piece of coconut is left. Do this step carefully otherwise it may become like paste. The grated coconut has to be like as shown in the picture below.

2. Soak and peel 12- 15 almonds, cashew nuts and chop them into small pieces and keep them ready. Also cut 3/4 cup of jaggery and keep it ready.




 3. Take a heavy bottomed pan and switch on the flame. Add shredded/grated coconut and chopped nuts into the pan. Keep on stirring otherwise coconut may got stick or turn black at the bottom of the pan.

4. Transfer the content immediately to the plate after the coconut mixture turns light golden brown in colour and keep it aside.

5. Now add jaggery and 1/4 cup of water to the pan and stir continuously until the jaggery gets melted.

6. Keep on stirring until you notice one string consistency. You can check this by taking a drop of jaggery syrup by using fingers as shown in the picture below.

7. Now add the coconut mixture into the jaggery syrup and keep on mixing.


8. Add elachi powder to the pan and give it a good mix.

9. Keep on mixing until the coconut mixture gets incorporated into the jaggery syrup and switch off the flame.
10. Now transfer the mixture into a greased plate or a mould and let it be allow to cool for some time. You can also make them into round shape like laddus or otherwise cut them into desired shape.

Level the burfi using a spoon.

Set the burfi for sometime to hold its shape.
After cooling cut the burfi into desired shape as your wish.

Now our delicious Coconut Jaggery burfi is ready to be served.

Notes:
  • Use a heavy bottomed pan to prepare the recipe otherwise it may get stick to bottom.
  • Adjust the amount of sweetness as per your taste. If the coconut is sweet, you reduce the amount of jaggery. You can use 1/2 cup of jaggery for 1 cup of grated coconut.
  • Adding nuts is entirely optional in this recipe. You can add any kind of nuts of your choice.
  • The burfi needs to hold the shape before transferring to the serving plate. So let it be cool down for some time and then only cut with the spoon.
